Serves 3 people
Ingredients
-2 cans of drained and rinsed pinto beans-½ of an onion
-3 large garlic cloves
-1 small zucchini
-⅓ cup of spelt flour (or any flour)
-½ cup of bread crumbs
-¾ cup of breadcrumbs (set aside for later)
-Grapeseed oil (or oil of choice)
Preheat oven to 400 degrees
Add one can of the drained and rinsed beans and blend.
Add half of the second can of drained and rinsed beans and the spelt flour. Mixture should be a humus consistency.
Scoop mixture into a bowl. Add the rest of the beans and ½ cup of breadcrumbs and stir lightly by hand until the mixture is thick enough to form the balls. You can add more breadcrumbs if needed. Season mixture with sea salt, pepper and cumin.
Hand form the balls to about golf ball size and place on a non stick baking sheet. Bake at 400 for 15 minutes. Check periodically, times may vary due to your oven.
Take balls out and lightly coat them with olive oil. Take the 3/4 cup of breadcrumbs you set aside and roll balls into crumbs so they become covered.
Fry balls in a sauce pan with olive oil until balls are golden brown (they will brown quickly).
Cool rounds and serve with your favorite vegan tzatziki sauce or ranch.
